Dough for pastries is slow-kneading, gently and progressively rolled and allowed long rising times for natural and complex flavours.

Ready to Prove vs Ready to Bake Products

Ready to Prove

These frozen unbaked Danish pastries should be proved in a warm, damp fermentation room for around two and a half hours, with direct proving. They should then be egg washed with whole egg to produce a wholesome golden colour on baking. 

Ready to Bake 

They are supplied pre-proved and egg washed. They are ready to bake straight from frozen. They are quick and easy to prepare, guaranteeing freshness and flexibility. Items can be baked on demand.
