Minus 8 are creators of some of the finest ice wine vinegars and verjus'. Named after the temperature at which the grapes are harvested, it is a family-owned company from Niagara, Canada.
Located between two great lakes, the freezing winters and hot, sunny summers combine to create an incredible flavour.
Starting as an ice winemaker, the company made the first vinegar for fun, but after tasting they realised they had come across something special.
