Ernest Soulard works in partnership with local farms from the surrounding areas to ensure strict controls are adhered to. All farms are located within 50km of the main site, limiting carbon footprint and any stress from transportation.
With a strong commitment to animal welfare, the company rears completely free-range ducks that can roam outside and grow slowly. Their breeding courses have been studied and certified as Organic Farming.
For the last two weeks, the Ducks (Barbary and Mulard breeds) are fed French wheat and corn, naturally GMO-free food, from their feed mill to have complete control of the quality of the products.
Their foie gras is harvested all year round, ensuring you get the freshest product. It has an exquisite taste and texture thanks to a carefully monitored diet and minimised stress on the animal during the slaughtering process.
