The Marennes-Oleron’s basin is perfectly located on the old salt marshes that were used to cultivate oysters 2 centuries ago, meaning the floor is made of clay and rich in phytoplankton. This creates the perfect condition for oyster farming and is what gives Geay Oysters their remarkable flavour.
