La Famille Boutrais is a family-run business that owns five oyster farms in France and Ireland. The company uses their traditional French know-how and passion for oyster cultivation to create premium oysters for top restaurants and hotels around the world.

La Famille Boutrais has a rigorous process of production. The French oyster seeds are brought in from the best hatcheries and are then grown in the Clew Bay Farm where their team bring them up to the half-grown stage. Then, batches are graded and dispatched to the different oyster farms according to the quality they wish to obtain. In any case, the company’s traceability is thoroughly monitored with exactness and enthusiasm.
