Ingredients:
- 8 St. Ewe Rich Yolk Eggs
- 1 tsp Smoked Paprika
- ½ tsp Tabasco (or more for extra spice)
- 1 tsp Dijon Mustard
- Salt & pepper
- A garnish of your choice
Method:
- Bring a pan of water to the boil and add your 8 St. Ewe Rich Yolk Opulent eggs.
- Boil for 8 minutes, remove and peel the shells.
- Cut the eggs in half lengthways and scoop out the yolks, adding them to a mixing bowl and keeping your egg whites to the side.
- Add the rest of the ingredients to the yolk and mix well until its nice and smooth.
- Add mixture into piping a bag, cut the bottom (for extra flair, add a piping tip of your choice!) and pipe into eggs where the yolk came from.
- Garnish with your season of choice – we love crushed pink peppercorns, smoked paprika and chilli flakes.
