The juice from ripe calamansi cultivated in the Philippines is mixed with vinegar and sugar cane to create Calamansi Vinegar. The vinegar is then left to age, allowing the flavours to develop.
Calamansi Vinegar has a citrus and sharp flavour that is perfect for dressings, ceviche and marinades for pork and chicken.
