Oligofruit (Stock Item)

Sosa is one of the leading manufacturers of premium ingredients for gastronomy and pastry. Sosa texturisers all share the same characteristics indispensable in the world’s finest kitchen; flavour neutrality and range of texture.

Oligofruit is a soluble Fiber of 100% vegetable origin, extracted from roots and tubers. Oligofruit helps maintain the texture of the products when thawed. Allows sugar to be reduced in preparations and improves the nutritional value of the recipe.

Used to partially substitute sugar – ratio 1:1 is not recommended. No flavour or colour. Easily soluble in cold preparation and works with acidic preparations.

Ideal for making meringue, ice cream, sponge cakes, mousse, cream. Dosage: Between 5 to 20%
