Extra Slow Set Pectin is used to make jams , fruit jellies and is especially good for making pâte de fruits as it gives you time work shape the confectionary. (Non-stock Item)

Extra Slow Set Pectin is used for jam and fruit jellies especially pâte de fruits, to reduce the dry extract to 55% and avoid adding too much sugar or cooking too long.

Extra Slow Set Pectin is designed to set a little slower than normal pectin, so that you still have enough working time to work and shape your confectionary. 

Works with pH up to 3.5. Extra Slow Set Pectin is heat resistant.

Dosage: 2.5 to 20 g/kg of mass.
